Pumpkin Spice Latte Recipe

Did you know Starbucks pumpkin spice flavoring contains dairy? So, even when ordered with non-dairy milk, your PSL has dairy! Try my healthy yet tasty version of the fall classic PSL and you can be sure there’s no dairy.

INGREDIENTS

  • 1/2 cup strong coffee or espresso

  • 2 tablespoons pureed pumpkin (canned)

  • 1 1/2 tablespoons maple syrup

  • 1/2 teaspoon pumpkin pie spice

  • 3/4 cup unsweetened almond milk or oat milk

  • 1/2 teaspoon vanilla extract

METHOD

  1. Brew the coffee or espresso and set aside.

  2. In a saucepan over medium heat, stir the pumpkin, maple syrup and pumpkin pie spice until combined. Slowly whisk in milk. Bring mixture to a low simmer, stirring occasionally and remove from heat. Stir in vanilla extract.

  3. Using a hand-held immersion blender, pulse several times until foamy and frothy, being careful not to splatter the hot liquid. (You can also transfer the milk mixture to a blender instead.)

  4. Add milk mixture to the hot coffee. Top with a dollop of homemade whipped cream or coconut whipped cream (optional) and sprinkle with additional pumpkin pie spice. Enjoy!

NOTES

  • If you don't have a blender, whisk vigorously by hand when the milk mixture starts to simmer on the stove. This will not create the same froth as a blender or immersion blender but will still be tasty and light.

  • For an adult version, add a shot of dark rum, bourbon or cognac.

  • Dairy free and gluten free.
