Cucumber, Tomato and Mint Salad Recipe

A fresh, simple, healthy Mediterranean-inspired salad with mint leaves.
INGREDIENTS
2 cucumbers, chopped
2 cups cherry tomatoes, halved (or 2 large tomatoes, diced)
1/2 cup red onion, chopped (about 1/2 an onion)
1/2 cup mint leaves, chopped
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
3/4 teaspoon sea salt
Sea salt and pepper, to taste
METHOD
Mix all ingredients in a large bowl. Season with sea salt and pepper, to taste. Garnish with additional mint, if desired, and enjoy!
NOTES
For extra flavor, mix vinegar and salt. Add the cucumbers, stir and refrigerate for one hour. Then add remaining ingredients and toss before serving.
Variation: add 1/2 cup pitted kalamata olives.
Variation: add cooked pasta, brown rice or your favorite grain. Add a cooked protein of your choice such as lentils or chicken.
Additional toppings: fresh herbs such as basil, chives, or parsley.
Refrigerate leftovers in an airtight container for up to four days.
