Cucumber, Tomato and Mint Salad Recipe

A fresh, simple, healthy Mediterranean-inspired salad with mint leaves.

INGREDIENTS

  • 2 cucumbers, chopped

  • 2 cups cherry tomatoes, halved (or 2 large tomatoes, diced)

  • 1/2 cup red onion, chopped (about 1/2 an onion)

  • 1/2 cup mint leaves, chopped

  • 1/4 cup red wine vinegar

  • 1/4 cup extra virgin olive oil

  • 3/4 teaspoon sea salt

  • Sea salt and pepper, to taste

METHOD

  1. Mix all ingredients in a large bowl. Season with sea salt and pepper, to taste. Garnish with additional mint, if desired, and enjoy!

NOTES

  • For extra flavor, mix vinegar and salt. Add the cucumbers, stir and refrigerate for one hour. Then add remaining ingredients and toss before serving.

  • Variation: add 1/2 cup pitted kalamata olives.

  • Variation: add cooked pasta, brown rice or your favorite grain. Add a cooked protein of your choice such as lentils or chicken.

  • Additional toppings: fresh herbs such as basil, chives, or parsley.

  • Refrigerate leftovers in an airtight container for up to four days.
