Lime Rickey

This super refreshing drink is made for long summer days. Make it virgin or adult, it's delicious either way.
INGREDIENTS
3 limes, washed, ends trimmed, cut into eighths and frozen
3 cups ice
2 cups water
1 10oz can sweetened condensed coconut milk
Extra lime plus fresh mint leaves for garnish (optional)
METHOD
Add all ingredients to a blender. Blend until limes and ice are broken up, no more than 15 seconds. If it’s over-blended, it will start to taste bitter. Adjust the consistency to your liking by adding more water as needed.
Pour through a fine-mesh strainer or cheesecloth into glasses. Garnish with mint leaves and a lime wedge, and enjoy!
NOTES
If you don't have time to freeze the limes ahead of time, then use cold limes for a more liquidy drink.
Instead of sweetened condensed coconut milk, use one 13.5oz can of coconut milk, 1/4 cup honey, and decrease the amount of water to 1 1/2 cups.
For an adult version, add a shot of light rum.
