Oatmeal Energy Balls

INGREDIENTS

  • 1/2 cup almond butter

  • 3 tablespoons coconut oil, melted

  • 3 tablespoons maple syrup

  • 1/3 cup pitted dates, finely chopped

  • 3 tablespoons chia seeds

  • 1/2 cup oats

  • 1/4 cup Lilly’s dark chocolate chips, or other dairy-free chocolate

  • 1/3 cup almonds, chopped or slivered

  • Pinch of sea salt

METHOD

  1. Add all ingredients to a large bowl. Using your hands, a silicone spatula or large spoon, mix well until the mixture begins sticking together.

  2. Use a cookie scoop or tablespoon to scoop the mixture and roll into balls with your hands. Repeat until all of the mixture is used, making a total of 24 balls. Refrigerate until set. Enjoy!

NOTES

  • Refrigerate in an airtight container for up to five days.

  • One serving is two energy balls.

  • Add cinnamon or vanilla extract for more flavor.

  • For nut-free, use sunflower seed butter and sunflower seeds instead of almond butter and almonds.

  • Dairy free and gluten free.
