Oatmeal Energy Balls

INGREDIENTS
1/2 cup almond butter
3 tablespoons coconut oil, melted
3 tablespoons maple syrup
1/3 cup pitted dates, finely chopped
3 tablespoons chia seeds
1/2 cup oats
1/4 cup Lilly’s dark chocolate chips, or other dairy-free chocolate
1/3 cup almonds, chopped or slivered
Pinch of sea salt
METHOD
Add all ingredients to a large bowl. Using your hands, a silicone spatula or large spoon, mix well until the mixture begins sticking together.
Use a cookie scoop or tablespoon to scoop the mixture and roll into balls with your hands. Repeat until all of the mixture is used, making a total of 24 balls. Refrigerate until set. Enjoy!
NOTES
Refrigerate in an airtight container for up to five days.
One serving is two energy balls.
Add cinnamon or vanilla extract for more flavor.
For nut-free, use sunflower seed butter and sunflower seeds instead of almond butter and almonds.
Dairy free and gluten free.
