Turmeric Ginger Dressing

Turmeric, ginger, and garlic are anti-cancer powerhouses, so why not enjoy them together on salads and other savory recipes? This vegan delight is so good, I could drink it with a straw.

Ingredients

  • 1 clove fresh garlic

  • 1 tablespoon fresh ginger root, sliced (about 1 inch of the knob)

  • Zest and juice from 1/2 a lemon

  • 1 teaspoon honey

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon sea salt

  • 1/8 teaspoon black pepper

  • 1/4 cup almond butter, unsalted and no sugar added

Method

  1. Peel the ginger with a vegetable peeler, then give it a rough chop.

  2. Place all ingredients in a mini food processor or blender in the order listed. Pulse or blend until thoroughly combined.

  3. For a thinner sauce, add more lemon juice or add water a few drops at a time. For a thicker sauce, reduce the amount of lemon juice. Enjoy!

Notes

  • Keep in an airtight container in the fridge for up to four days.

  • Makes 1 1/4 cups.

  • Use any combination of fresh or ground ginger, garlic, and turmeric. For the most intense flavor, use fresh versions of all three. But if you don’t have fresh on hand or if you’re short on time, use the ground version of each.

    • Garlic: use 1/4 teaspoon ground per fresh clove.

    • Ginger: use 3/4 teaspoon ground.

    • Turmeric: use 1 tablespoon fresh (prepare it as you would the fresh ginger).
