Beet & Citrus Salad

Pair the sweetness of beets, the tanginess of citrus and dark leafy greens for a delicious salad that delivers powerful nutrients for healing and restoration.
Ingredients
4 large beets
4 clementines, tangerines or other citrus fruit, separated into sections
1/2 red onion, finely chopped
2 cups spinach
1/2 cup fresh mint, chopped
1/2 cup crumbled goat cheese, optional, if tolerated
1/3 cup olive oil
3 tablespoons champagne vinegar or white wine vinegar
Salt & pepper, to taste
Any variety of leafy greens
Method
Add the beets to a large pot of boiling water. Simmer until tender, about 40 minutes. Drain and let cool.
Combine oil, vinegar, salt, and pepper to create a dressing. Mix well.
Peel the beets and cut into cubes or slices. Scatter over a bed of leafy greens and add remaining ingredients on top.
Drizzle with dressing and enjoy!
Notes
Make it dairy-free: Skip the goat cheese or use vegan or dairy-free cheese.
Time-saver: Buy pre-cooked beets.
