Nutty Avocado Dip

This healthy, smooth, crunchy dip tastes amazing and makes any raw or cooked veg irresistible. Use it as a dip for tortilla chips or on toast with an egg.

Ingredients

  • 2 cloves garlic

  • 1 avocado, peeled and pit removed

  • 1/2 cup fresh parsley, packed

  • 1/2 cup fresh cilantro, packed

  • Juice of 2 limes (roll the limes on the counter with your hand first to unlock the juices)

  • 1/2 cup extra virgin olive oil

  • 1/2 cup water

  • 1 teaspoon sea salt

  • 1/2 cup raw unsalted pistachios

Method

  1. Place all ingredients except the nuts in a small food processor or high-speed blender.

  2. Pulse or blend until smooth.

  3. Add the nuts and pulse or blend until just incorporated- just a few pulses to keep some crunch or more pulses for a smoother consistency. Enjoy!

Notes

  • Keep in an airtight container in the fridge for up to three days.

  • Makes 2 cups.

  • No pistachios: use walnuts instead.

  • Adjust the amount of water up or down to achieve the desired consistency.
