Nutty Avocado Dip

This healthy, smooth, crunchy dip tastes amazing and makes any raw or cooked veg irresistible. Use it as a dip for tortilla chips or on toast with an egg.
Ingredients
2 cloves garlic
1 avocado, peeled and pit removed
1/2 cup fresh parsley, packed
1/2 cup fresh cilantro, packed
Juice of 2 limes (roll the limes on the counter with your hand first to unlock the juices)
1/2 cup extra virgin olive oil
1/2 cup water
1 teaspoon sea salt
1/2 cup raw unsalted pistachios
Method
Place all ingredients except the nuts in a small food processor or high-speed blender.
Pulse or blend until smooth.
Add the nuts and pulse or blend until just incorporated- just a few pulses to keep some crunch or more pulses for a smoother consistency. Enjoy!
Notes
Keep in an airtight container in the fridge for up to three days.
Makes 2 cups.
No pistachios: use walnuts instead.
Adjust the amount of water up or down to achieve the desired consistency.
